Start by creaming together the softened butter and granulated sugar using an electric hand mixer. Beat them together for about 1-2 minutes until the mixture is light and fluffy. If your butter isn’t softened yet, simply microwave it for 10-15 seconds until it’s soft but not melted

Next, add the egg and vanilla extract to the creamed butter and sugar mixture. Continue mixing for another 1-2 minutes until everything is well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder and salt.
2 & 1/2 cups AP Flour, 1 tsp. Baking Soda, 1/4 tsp. Salt
Gradually add half of the dry ingredients to the wet mixture, mixing until just combined.
After the first half is mixed in, add the remaining dry ingredients and continue to mix until the dough comes together. If you need to use a spatula in the end to ensure everything is mixed in you can do so.
Cover the bowl with plastic wrap and chill it in the refrigerator for at least 30 minutes.
After the dough has chilled, take small portions (about 1 tablespoon each) of dough and roll them between your hands into smooth balls. Once rolled, coat each dough ball in granulated sugar, ensuring it’s evenly covered.
Place each sugar-coated dough ball onto a parchment-lined baking tray or air fryer basket. Use your fingers to slightly flatten each cookie.
Preheat your air fryer to 350°F (175°C) for about 3-5 minutes. Once preheated, Air fry the cookies for 10-12 minutes, or until they’re just getting golden around the edges.
After cooling slightly on the pan after taking them out, transfer them to a wire rack to cool completely.
