Combine Wet Ingredients: In another bowl, whisk together the homemade buttermilk, melted butter, eggs, vanilla extract, and instant coffee (or brewed coffee) until smooth.
1/2 cup Melted Butter, 2 large Eggs, 1 tsp. Vanilla Extract, 1/4 cup Brewed Coffee or Instant
Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay
Fill Muffin Tins: Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full
