In a large pot, boil salted water and cook the tortellini according to package instructions. Reserve about 1 cup of pasta water before draining.

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the tomato paste, minced garlic, crushed red pepper, paprika, and salt until well combined and heated through, cook for 5 minutes, allowing it to caramelize slightly and deepen in flavor

Carefully add the vodka to the skillet, scraping up any bits from the bottom. Let it simmer for 2-3 minutes to cook off the alcohol.

Reduce the heat to low, then add the heavy cream and stir. Simmer on low until everything thickens up, then stir in grated Parmesan cheese

Add the cooked tortellini to the skillet, tossing to coat. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached. Add chopped fresh basil. Adjust seasoning if necessary & enjoy!
