  • 1/2 Sweet Onion chopped
  • 1/4 cup Tomato Paste
  • 2 tbsp. Minced Garlic
  • 1 tsp Salt
  • 1 tsp Crushed Red Pepper
  • 1/2 tsp Paprika
  • 3 oz Vodka
  • 1 cup Heavy Cream
  • 3/4 cup Parmesan Cheese
  • 1 cup Reserved Pasta Water
  • Basil

Instructions

  • In a large pot, boil salted water and cook the tortellini according to package instructions. Reserve about 1 cup of pasta water before draining.

  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until translucent, about 5 minutes.

  • Stir in the tomato paste, minced garlic, crushed red pepper, paprika, and salt until well combined and heated through, cook for 5 minutes, allowing it to caramelize slightly and deepen in flavor

  • Carefully add the vodka to the skillet, scraping up any bits from the bottom. Let it simmer for 2-3 minutes to cook off the alcohol.
